Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 cup coconut milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup shredded coconut (sweetened or unsweetened)
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch pan or two 9-inch round pans.
- Cream the butter and sugar until fluffy. Add eggs one at a time, mixing well.
- Stir in the vanilla and shredded coconut.
- In another bowl, mix flour, baking powder, and salt.
- Alternate adding dry ingredients and coconut milk to the butter mixture.
- Pour into the pan(s) and bake for 30-35 minutes.
